  • 1 pound ground beef
  • 1 can (15 oz) refried beans
  • 1 can (10 oz) enchilada sauce Divided into two portions for filling and topping
  • 8 pieces flour tortillas Can substitute with corn tortillas for gluten-free
  • 2 cups shredded cheese Use cheese of your choice, like Monterey Jack or pepper jack

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Stir in the refried beans and half the enchilada sauce until well combined.
  • On each tortilla, add a scoop of the beef mixture and some shredded cheese, then roll them tightly.
  • Place the rolled tortillas seam-side down in a baking dish.
  • Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  • Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  • Serve hot.

Notes

Pair with fresh salad, guacamole, or sour cream for added flavor. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave before serving.
