  • 2 pounds Yukon gold potatoes
  • 1 medium white or yellow onion
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour Can substitute with gluten-free flour
  • 2 cups unsweetened almond milk
  • 2 cups cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup Gruyere cheese
  • 1/2 cup Parmesan cheese
  • 2 tablespoons fresh parsley For garnish

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the Yukon gold potatoes and onion thinly.
  • In a saucepan over medium heat, melt the butter and sauté the onion until translucent.
  • Whisk in the flour and cook for 1-2 minutes.
  • Gradually add the almond milk, stirring continuously until the mixture thickens.
  • Stir in the cheddar cheese, garlic powder, salt, and black pepper until the cheese melts.
  • Layer half of the potatoes in a greased baking dish, pour half of the cheese sauce over, then repeat with the remaining potatoes and sauce.
  • Top with Gruyere and Parmesan cheese.

Baking

  • Bake for about 45-60 minutes until the potatoes are tender and the top is golden.
  • Garnish with parsley before serving.

Notes

Use a mandoline slicer for evenly thin potato and onion slices. Cover the dish with foil for the first 30 minutes to retain moisture, then uncover to brown the top. You can also add vegetables like spinach or broccoli for added nutrition.
