Main Ingredients

  • 6 pieces ripe tomatoes Use fully ripe tomatoes for the best taste.
  • 1 piece cucumber, peeled and chopped
  • 1 piece bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 tablespoons olive oil Can drizzle more on top when serving.
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil for garnish Can reserve some chopped vegetables to add for extra texture.

Preparation

  • In a blender, combine the tomatoes, cucumber, bell pepper, red onion, and garlic. Blend until smooth.
  • Add the vegetable broth, olive oil, and red wine vinegar; blend until well combined.
  • Season with salt and pepper to taste.
  • Refrigerate for at least 2 hours before serving to chill and allow flavors to meld.

Serving

  • Serve cold, garnished with fresh basil.
  • Add a drizzle of olive oil on top for extra flavor.

Notes

Gazpacho tastes even better when made a day in advance. It can last up to 3 days in the refrigerator in an airtight container. Give it a quick stir before serving any leftovers.
