Preparation

  • In a bowl, mash the ripe bananas until smooth.
  • In another bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
  • Add the mashed bananas to the egg mixture and blend well.

Cooking

  • Heat a skillet over medium heat and add butter.
  • Dip each slice of bread into the banana-egg mixture, ensuring both sides are coated.
  • Place the coated bread in the skillet and cook until golden brown on both sides, about 2-3 minutes per side.

Serving

  • Serve warm with maple syrup.

Notes

You can add chocolate chips for a sweet surprise. Letting the bread sit in the mixture for longer can add a crispier texture. Store leftovers in an airtight container in the fridge for up to 2 days.
