  • 2 lbs beef chuck roast
  • 4 pieces dried guajillo chilies Toast before soaking
  • 2 pieces dried ancho chilies Toast before soaking
  • 1 piece onion, quartered
  • 4 cloves garlic
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • to taste Salt and pepper Adjust according to preference
  • 4 cups beef broth
  • 12 pieces corn tortillas
  • 2 cups shredded cheese (like Oaxaca or mozzarella)
  • to taste Fresh cilantro and onions for garnish Optional toppings

Instructions
 

Preparation

  • In a dry skillet, toast the dried chilies until fragrant. Soak them in hot water until softened.
  • In a blender, combine the soaked chilies, onion, garlic, cumin, oregano, salt, and pepper to make a smooth sauce.
  • Place the beef roast in a crockpot. Add the sauce and beef broth. Cook on low for 6-8 hours or until the meat is tender.
  • Shred the beef and set it aside.

Cooking

  • Heat a skillet over medium heat.
  • Dip the tortillas in the beef consommé, then place them on the skillet.
  • Add some shredded beef and cheese to one half of each tortilla, fold them, and cook until the cheese is melted and the tortillas are crispy.

Serving

  • Serve the Beef Birria Tacos hot, with a side of the rich consommé for dipping, garnished with cilantro and onions.

Notes

For extra flavor, let the beef marinate in the sauce overnight before cooking. Feel free to experiment with different types of cheese for a unique twist. If you want more heat, add additional dried chilies to the sauce.
