Ingredients
  

For the Tacos

  • 2 lbs beef short ribs or chuck roast Choose your preferred cut of beef.
  • 3 pieces dried guajillo chilies Soaked in hot water.
  • 2 pieces dried ancho chilies Soaked in hot water.
  • 4 cloves garlic
  • 1 piece onion, quartered
  • 2 cups beef broth
  • 1 tsp cumin
  • 1 tsp oregano
  • to taste Salt and pepper Adjust according to preference.
  • to taste Oaxacan cheese or mozzarella cheese For topping.
  • to taste Fresh cilantro, chopped For garnish.
  • to taste Lime wedges For serving.

Instructions
 

Preparation

  • Soak the dried chilies in hot water for about 15 minutes until softened.
  • In a blender, combine the softened chilies, garlic, onion, broth, cumin, oregano, salt, and pepper. Blend until smooth.
  • In a heavy pot, add the beef and pour the blended sauce over it. Bring to a simmer, cover, and cook for about 2.5-3 hours until the meat is tender.
  • Once cooked, remove the beef and shred it with two forks.

Cooking Tacos

  • Heat a frying pan over medium heat and warm the corn tortillas.
  • Assemble the tacos by adding the shredded beef and cheese to each tortilla, folding them in half, and frying until crispy.

Serving

  • Serve hot with chopped cilantro, lime wedges, and a side of consomé for dipping.

Notes

For extra flavor, let the beef marinate in the sauce overnight before cooking. Test the seasoning and adjust the salt and spices to your taste. Freshly made corn tortillas yield the best texture and flavor.
