Ingredients
  

Blueberry Filling

  • 4 cups blueberries Fresh or frozen, do not thaw if using frozen
  • 2 tablespoons flour For coating blueberries
  • 2 tablespoons sugar For coating blueberries

Crisp Topping

  • 1 cup sifted flour
  • ½ cup butter Softened
  • 1 cup sugar (granulated)
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder

Instructions
 

Preparation

  • Preheat the oven to 375 degrees.
  • Place the blueberries in a large bowl. Sprinkle 2 tablespoons of flour and 2 tablespoons of sugar over the berries. Toss to coat the blueberries well.
  • Transfer the blueberry mixture into a buttered 8" by 8" baking dish.
  • For the topping, cream together the flour, butter, sugar, salt, and baking powder using a pastry blender. Add the vanilla extract and stir to combine.
  • Sprinkle the crumbled topping evenly over the blueberry mixture.

Baking

  • Bake the dish in the preheated oven for 45 to 55 minutes, or until the topping turns golden brown.
  • Once done, transfer the baked crisp to a wire rack and allow it to cool for 30 minutes before serving.

Notes

Best served warm. Can be enjoyed with vanilla ice cream or a dollop of whipped cream. Store leftovers in the refrigerator for up to four days.
