  • 10 large large tortillas
  • 1 pound breakfast sausage (or bacon)
  • 12 large large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 bell pepper, finely chopped
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • Salsa (optional, for serving)
  • Avocado slices (optional, for serving)

Instructions
 

Preparation

  • Preheat the BBQ grill to medium heat.
  • In a large skillet, cook the sausage or bacon until fully cooked. Remove from the heat and drain excess grease.
  • In the same skillet, add the chopped onion and bell pepper. Sauté until they are soft.
  • In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the veggies and cook until the eggs are scrambled and fully cooked.

Assembling the Burritos

  • Lay out the tortillas on a flat surface. In the center of each tortilla, add some of the cooked sausage or bacon, scrambled eggs, and a sprinkle of shredded cheese.
  • Fold in the sides of the tortilla and roll it up tightly.
  • Place the wrapped burritos seam-side down on the grill. Cook for 2-3 minutes on each side, or until the tortillas are crispy and grill marks appear.

Serving

  • Remove from the grill and serve with salsa and avocado if desired.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for a month. Reheat thoroughly before serving. Use a variety of fillings for more flavor, and consider using whole wheat or gluten-free tortillas for a healthier option.
