  • 1 cup shredded cheddar cheese Add more for a stronger cheese flavor.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth Can be substituted with chicken broth.
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Preparation

  • In a large pot, melt butter over medium heat.
  • Add onions and garlic, sautéing until onions are translucent.
  • Add broccoli florets and vegetable broth, and bring to a boil.
  • Reduce heat and simmer until broccoli is tender.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in the heavy cream and cheddar cheese until melted and combined.
  • Season with salt and pepper to taste and serve warm.

Notes

Serve warm in bowls, topped with extra cheddar cheese or croutons. This soup pairs well with crusty bread or a salad. For a smoother texture, blend the soup longer. A pinch of nutmeg can enhance the flavor.
