Preparation

  • Cook quinoa or brown rice according to package instructions.
  • In a pan, cook the ground beef or turkey over medium heat until browned; season with salt and pepper.

Assembly

  • In a bowl, layer the cooked quinoa or rice as the base.
  • Add the cooked meat on top.
  • Top with cherry tomatoes, cucumber, avocado, cheese, and red onion.
  • Serve on a bed of lettuce or greens.
  • Drizzle with your favorite dressing before serving.

Notes
