  • 2 cups fluffy butter beans (lima beans) Soaked overnight for best texture
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 2 units carrots, diced
  • 2 stalks celery, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil for sautéing

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion, garlic, carrots, and celery, and sauté until softened.
  • Stir in the butter beans, vegetable broth, thyme, rosemary, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for about 20-30 minutes.
  • Remove the bay leaf and blend the soup until creamy if desired.
  • Adjust seasonings and serve hot.

Notes

Serve hot in bowls. You can add a drizzle of olive oil on top for extra flavor. Pair it with crusty bread or a simple salad for a complete meal. This soup can also be garnished with fresh herbs like parsley or a sprinkle of cheese if desired.
