Ingredients
  

Filling

  • 1 lb ground chicken
  • 1 piece bell pepper, diced
  • 1 piece onion, diced
  • 2 cups cooked rice
  • 1 cup shredded cheese Use any cheese like cheddar or Monterey Jack.

Wrap

  • 4 large tortillas
  • to taste Salt and pepper
  • Olive oil for toasting

Instructions
 

Cooking the Filling

  • In a skillet, cook the ground chicken over medium heat until browned.
  • Add the diced bell pepper and onion, cooking until softened. Season with salt and pepper.

Assembling the Burritos

  • In a bowl, mix the cooked chicken mixture with rice and shredded cheese.
  • Spoon the mixture onto each tortilla, rolling them up tightly to form burritos.

Toasting the Burritos

  • Heat a bit of olive oil in a pan and toast the burritos on each side until golden brown and crispy.

Notes

You can serve these burritos with salsa, sour cream, or guacamole. Leftovers should be cooled, wrapped in foil or stored in an airtight container and can be refrigerated for up to 3 days. To reheat, use a microwave or skillet.
