  • 2 pounds ground beef Can substitute with ground turkey or chicken for a lighter option.
  • 4 large potatoes, thinly sliced Slice as thinly as possible for even cooking.
  • 1 medium onion, diced
  • 3 cups shredded cheese (cheddar or your choice) Feel free to experiment with different cheese types.
  • 1 can cream of mushroom soup
  • 1 cup milk
  • to taste Salt and pepper
  • Optional toppings: green onions, crushed chips For added flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is translucent. Drain excess fat.
  • In a large bowl, combine the cream of mushroom soup and milk, mixing well. Season with salt and pepper.
  • In a greased baking dish, layer half of the sliced potatoes, half of the ground beef mixture, and half of the cheese.
  • Repeat with the remaining potatoes, beef, and top with the rest of the cheese.
  • Pour the soup mixture evenly over the casserole.
  • Cover with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  • Let it cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by microwaving or baking until warmed through. Can also be frozen before baking for up to 3 months.
