Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the chopped apples with olive oil, cinnamon, nutmeg, and allspice. Spread them on a baking sheet. Roast for about 25 minutes or until tender and caramelized.
  • In a large pot, heat some olive oil over medium heat and sauté the onion until translucent. Add the garlic and smoked paprika, cooking for another minute.
  • Stir in the pumpkin puree and roasted apples, then pour in the broth. Bring to a simmer and cook for 10 minutes.
  • Blend the soup until smooth using an immersion blender or regular blender.
  • Stir in the heavy cream and Parmesan cheese, and season with salt and pepper to taste.

Serving

  • Serve warm, garnished with fresh herbs.

Notes

To store leftover soup, let it cool completely. Transfer it to an airtight container and keep it in the refrigerator for up to 3 days. You can also freeze the soup for up to 3 months. Just make sure to leave some space at the top of the container, as the soup will expand when frozen. Thaw it in the refrigerator overnight before reheating. For extra flavor, you can add a splash of maple syrup or honey to the soup after blending.
