  • 8 oz pasta Use any type you prefer, such as penne or rotini.
  • 1 lb smoked sausage, sliced You can use any sausage you like.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream Adjust the amount for desired richness.
  • 1 cup chicken broth
  • 1 cup spinach You can add more vegetables if desired.
  • to taste Salt and pepper Always taste and adjust before serving.
  • to serve Parmesan cheese, grated Sprinkle on top for extra flavor.

Cooking

  • In a large pot, cook the sliced smoked sausage over medium heat until browned.
  • Add the chopped onion and minced garlic; sauté until the onion is translucent.
  • Pour in the chicken broth and add the pasta.
  • Bring to a boil and then reduce heat, cooking until the pasta is al dente.
  • Stir in heavy cream and spinach, cooking until spinach is wilted.
  • Season with salt and pepper to taste.
  • Serve with freshly grated Parmesan cheese.

Notes

If you have leftovers, let the pasta cool down before storing it in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave, adding extra cream or broth if needed. For a lighter version, use turkey sausage or substitute half of the cream with low-fat milk.
