Ingredients
  

Main Ingredients

  • 3-4 pounds beef chuck roast Use less expensive cuts of meat for budget-friendliness.
  • 4 pieces carrots, chopped
  • 4 pieces potatoes, chopped
  • 1 piece onion, quartered
  • 4 cloves garlic, minced

Liquid and Seasoning

  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme

Optional Ingredients for Searing and Gravy

  • 2 tablespoons olive oil For searing (optional)
  • 2 tablespoons corn starch For gravy (optional)
  • 1/4 cup water For gravy (optional)

Instructions
 

Preparation

  • In a skillet, heat olive oil over medium-high heat and sear the beef roast on all sides until browned, about 4-5 minutes per side (this step is optional).
  • Place the carrots, potatoes, onion, and garlic in the slow cooker.
  • Place the seared roast on top of the vegetables.

Cooking

  • In a bowl, mix beef broth, Worcestershire sauce, salt, pepper, and thyme. Pour this mixture over the roast and vegetables.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours, until the roast is tender.

Optional Gravy

  • If making gravy, remove the roast and vegetables. Mix cornstarch with water, add to the slow cooker, and cook on high until thickened, about 5 minutes.

Notes

For extra flavor, season the roast with herbs and spices before searing it. If you're short on time, you can skip searing. Cut the vegetables into similar sizes for even cooking. For thicker gravy, mix cornstarch well with water before adding it to the slow cooker.
