Ingredients
  

Main Ingredients

  • 1 cup lentils Rinsed thoroughly before cooking
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth Ensure it's vegan if desired
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

  • In a large pot, heat a little oil over medium heat. Add the onion, carrots, and celery and sauté until softened.
  • Stir in the garlic and spices and cook for an additional minute.
  • Add the lentils, vegetable broth, and diced tomatoes to the pot.

Cooking

  • Bring to a boil, then reduce heat and simmer until lentils are tender, about 25-30 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

Store leftovers in the refrigerator for 3-4 days or freeze for up to 3 months. To reheat, thaw overnight in the fridge and warm in a pot over low heat. Consider blending for a creamier texture or leaving it chunky for a heartier bite.
