  • 2 medium carrots, diced
  • 2 medium potatoes, peeled and diced
  • 3 cups beef broth
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and garlic, and sauté until translucent.
  • Add the ground beef and cook until browned.
  • Stir in the carrots and potatoes, cooking for another 5 minutes.
  • Add the beef broth, diced tomatoes, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30-40 minutes, until vegetables are tender.
  • Serve hot.

Serve the stew hot in bowls, paired with crusty bread or a side salad. Garnish with fresh herbs like parsley for added flavor.
