Ingredients
  

Main ingredients

  • 1 cup chicken breast, cubed Use boneless, skinless chicken for best results.
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots) You can use any vegetables you have on hand.

Sauce and seasonings

  • 2 tablespoons olive oil For frying.
  • 2 tablespoons soy sauce (or tamari for gluten-free) Soy sauce is essential for flavor.
  • 1 teaspoon garlic powder Add more if desired for extra flavor.

Optional garnish

  • to taste sesame seeds For garnish.

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Add the cubed chicken breast to the skillet. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.
  • Once the chicken is cooked, add the mixed vegetables to the skillet. Stir frequently and cook for another 5 minutes, until the vegetables are tender.
  • Sprinkle in the garlic powder, salt, and pepper. Then pour in the soy sauce and mix everything well.
  • Cook for an additional 1-2 minutes to let the flavors combine.
  • Serve immediately, garnished with sesame seeds and green onions if desired.

Notes

This stir-fry can be served on its own or over brown rice, quinoa, or cauliflower rice. A light salad pairs well for extra freshness. For leftovers, store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
