  • 1 cup unsalted butter, softened Make sure your butter is soft but not melting for the best creaminess.
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips Try using dark chocolate chips for a richer flavor that complements the espresso.
  • 1 tablespoon espresso powder Decaf espresso powder can be used for a lower caffeine option.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, and espresso powder.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the chocolate chips.

Baking

  • Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Store in an airtight container at room temperature for about a week. For longer storage, separate them with parchment paper and freeze in a freezer-safe bag.
