Cookie Dough Ingredients

  • 110 g unsalted butter, softened Make sure your butter is at room temperature.
  • 100 g light brown sugar
  • 60 g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp honey or golden syrup
  • 180 g plain flour You can use gluten-free flour to make these gluten-free.
  • 50 g cocoa powder
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 100 g dark chocolate chips You can mix in different types of chocolate chips for variety.
  • 60 ml double/heavy cream For decorating.
  • Rainbow sprinkles or chocolatey bits For decorating.

Preparation

  • Preheat the oven to 180C (160C fan).
  • In a mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until smooth.
  • Add the egg, vanilla extract, and honey or golden syrup; mix well.
  • In a separate bowl, combine the plain flour, cocoa powder, bicarbonate of soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Fold in the dark chocolate chips.
  • Spoon the cookie dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Bake in the preheated oven for 10-11 minutes; the centers should look underbaked.
  • Allow to cool slightly before decorating with cream and sprinkles.

Notes

Serve warm for the best experience. These cookies also pair well with ice cream. To store, keep them in an airtight container at room temperature for 3-5 days, or freeze for up to 3 months.
