Ingredients
  

Vegetable Ingredients

  • 4 medium-sized potatoes, peeled and diced
  • 1 whole onion, chopped
  • 2 whole carrots, sliced
  • 2 stalks celery, sliced

Liquids and Fats

  • 4 cups vegetable or chicken broth
  • 1 cup milk For a creamier texture, use heavy cream instead.
  • 2 tablespoons butter

Seasonings and Garnish

  • Salt and pepper to taste
  • optional Fresh parsley for garnish

Cooking

  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion and sauté until soft, about 5 minutes.
  • Stir in the carrots and celery, cooking for another 5 minutes.
  • Add the diced potatoes and broth to the pot. Bring to a boil.
  • Reduce heat and simmer for 20-25 minutes, until the potatoes are tender.
  • Use a potato masher or blender to puree the soup to your desired consistency.
  • Stir in the milk and season with salt and pepper.
  • Cook for another 5 minutes, then remove from heat.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Store in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently before serving. This recipe can be made vegetarian by using vegetable broth and adding vegetables like leeks or bell peppers for variations.
