  • 2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter Softened
  • 1 large egg Room temperature

Instructions

Preparation

  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the molasses and egg to the mixture; mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
  • Chill the dough for at least 1 hour to make it easier to handle.

Baking

  • Preheat the oven to 350°F (175°C).
  • Roll out the chilled dough on a floured surface to about 1/4 inch thick.
  • Cut out gingerbread man shapes using a cookie cutter and place them on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 8-10 minutes until the edges are firm but not too dark.
  • Remove from the oven and allow cookies to cool on a wire rack before decorating.

Notes

Let the cookies cool completely before decorating to ensure the icing does not melt. Store in an airtight container to keep them soft and chewy.
