  • 1/4 cup melted coconut oil

  • 1 cup mixed fresh fruits (berries, banana, etc.) Use seasonal fruits for variety.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the granola, honey, and melted coconut oil until combined.
  • Press the mixture firmly into a muffin tin to form cups.

Baking

  • Bake in the oven for 10-12 minutes or until golden brown.
  • Allow the granola cups to cool completely before removing them from the tin.

Serving

  • Fill each granola cup with Greek yogurt and top with mixed fruits.
  • Serve immediately or store in the fridge for a quick meal.

Notes

These granola cups are best served fresh but can be stored in an airtight container in the refrigerator for about 3-4 days. Freeze before filling for longer storage. Experiment with different types of granola and seasonal fruits for varied flavors.
