  • 4 medium potatoes, sliced Yukon gold or russet potatoes work well
  • 1 cup shredded cheese Cheddar or your choice
  • 1 cup cream of mushroom soup Or use cream of chicken for different flavor
  • 1 medium onion, chopped Add sautéed onions for more flavor
  • to taste Salt and pepper Season well for best flavor
  • optional cooked vegetables (like corn or peas) For extra nutrition

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef with chopped onion until cooked through; drain excess fat.
  • In a large casserole dish, layer half of the sliced potatoes, seasoned with salt and pepper.

Assembly

  • Spread the cooked ground beef evenly over the potatoes.
  • Add the cream of mushroom soup on top, followed by the shredded cheese.
  • Layer the remaining potatoes on top, seasoning again.

Baking

  • Cover the dish with aluminum foil and bake for 45 minutes.
  • Remove foil and bake for an additional 15-20 minutes, until potatoes are tender and cheese is bubbly.
  • Let it cool for a few minutes before serving.

Notes

For extra flavor, add some herbs like thyme or rosemary to the beef while it cooks. You can mix in any cooked vegetables you have on hand, or try adding breadcrumbs mixed with butter for a crunchy topping.
