  • 8 oz pasta
  • 1 lb smoked sausage, sliced Try kielbasa or Italian sausage for different flavors.
  • 1 cup barbecue sauce
  • 1 cup chicken broth
  • 1/2 cup diced onion
  • 1/2 cup bell peppers, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large pot, heat some oil over medium heat. Add the sliced sausage and cook until browned.

Cooking

  • Add the onion, bell peppers, and garlic, sautéing until the vegetables are tender.
  • Stir in the barbecue sauce and chicken broth, bringing it to a simmer.
  • Add the cooked pasta to the pot, mixing well to combine.
  • Season with salt and pepper to taste.
  • Cook for an additional few minutes until heated through.
  • Garnish with fresh parsley if desired and serve hot.

Notes

This dish is great for potlucks. Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months. To reheat, thaw overnight and reheat in a pot or microwave.
