  • 1 lb ground beef Make sure to drain excess fat.
  • 1 can diced tomatoes
  • 1 cup corn (canned or frozen)
  • 1 packet taco seasoning
  • 8 oz cream cheese Soften before mixing.
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 package biscuit dough Used for the base layer.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat until cooked through. Drain excess fat.
  • Stir in diced tomatoes, corn, and taco seasoning. Mix well and let simmer for a few minutes.
  • In a separate bowl, soften the cream cheese and mix it with the beef mixture until well incorporated.

Assembly

  • In a greased casserole dish, layer the biscuit dough at the bottom.
  • Pour the beef mixture over the biscuit layer.
  • Top with shredded mozzarella and cheddar cheese.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Let cool for a few minutes before serving.

Notes

For extra flavor, consider adding fresh toppings like chopped green onions, cilantro, or jalapeños. This pairs well with a side salad or warm tortilla chips. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
