For the Cookies

  • 1/2 cup unsalted butter, softened Make sure your butter is softened for easy mixing.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can use gluten-free flour blend as a substitute.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 lime Zest of 1 lime Use fresh lime zest.
  • 1/4 cup fresh key lime juice Fresh juice gives the best flavor.

For the Glaze

  • 1 cup powdered sugar
  • 1 tablespoon key lime juice Adjust for sweetness or tanginess.
  • 1 lime Zest of 1 lime

Preparation

  • Preheat the oven to 350°F (175°C). Grease or line a baking sheet.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the lime zest and key lime juice.
  • Drop spoonfuls of dough onto the prepared baking sheet.

Baking

  • Bake for 8-10 minutes or until the edges are lightly golden.
  • Let the cookies cool on a wire rack.

Glazing

  • For the glaze, mix the powdered sugar, key lime juice, and lime zest until smooth.
  • Drizzle the glaze over the cooled cookies.

Notes

Storage: Store cookies in an airtight container at room temperature for up to a week; freeze for up to three months. Pair with milk or tea.
