Ingredients
  

Cake Base

  • 1 box yellow cake mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup water

Soaking Mixture

  • 1 can sweetened condensed milk (14 oz)
  • 1/2 cup key lime juice Use fresh key limes for best flavor

Toppings

  • 1 container whipped topping (8 oz)
  • 2 limes zest of Grate carefully to avoid the bitter white pith

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a large bowl, combine the cake mix, eggs, vegetable oil, and water. Beat on medium speed for 2 minutes until well blended.
  • Pour the batter into the prepared baking pan.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool for 15 minutes.
  • Poke holes all over the cake with a fork.

Soaking

  • In a separate bowl, mix the sweetened condensed milk and key lime juice. Pour the mixture over the warm cake, allowing it to soak in.
  • Refrigerate for at least 2 hours.

Serving

  • Before serving, top the cake with whipped topping and garnish with lime zest.

Notes

Key Lime Poke Cake is best served chilled. It pairs well with vanilla ice cream or coffee. Store leftovers covered in the refrigerator for 3 to 4 days. The cake may get softer over time due to soaking.
