Main Ingredients

  • 1 cup quinoa Rinsed under cold water
  • 2 cups water or vegetable broth Used to cook the quinoa
  • 1 pound grilled chicken breast, chopped Cooked and seasoned
  • 1 cup mixed vegetables Like bell peppers, broccoli, carrots
  • 1 piece avocado, sliced For topping
  • 1 tablespoon olive oil For sautéing vegetables
  • Salt and pepper to taste For seasoning
  • Optional: your favorite spices or herbs

Preparation

  • Rinse the quinoa under cold water for a minute.
  • In a pot, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce to low heat. Cover and simmer for about 15 minutes or until all the liquid is absorbed and the quinoa is fluffy.
  • While the quinoa cooks, grill or pan-fry the chicken breast until fully cooked, about 7-10 minutes per side. Season with salt, pepper, and any spices you like.
  • In a separate pan, heat olive oil over medium heat and sauté the mixed vegetables until tender, about 5-7 minutes. Season with salt and pepper.
  • Once everything is cooked, assemble your meal prep containers. Start with a base of quinoa, then add the grilled chicken, sautéed vegetables, and slices of avocado on top.
  • Allow to cool before sealing the containers.

Notes

Store meal prep containers in the refrigerator for up to 3-4 days. Containers should be airtight to maintain freshness. Individual portions can be frozen for up to a month. Batch cooking is recommended for convenience.
