Ingredients
  

For the crust

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup unsalted butter, chilled and diced Make sure butter is very cold for a flaky crust.
  • 6 to 8 tablespoons ice water Add water gradually until dough comes together.

For the filling

  • 4 cups thinly sliced apples (such as Granny Smith or Honeycrisp) Experiment with different types of apples for varying flavors.
  • 3/4 cup sugar Adjust sugar amount for sweetness to your liking.
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, to dot Dot on top of apple filling before baking.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, mix flour, salt, and sugar. Cut in butter until the mixture resembles coarse crumbs.
  • Stir in water, a tablespoon at a time, until the dough comes together.
  • Roll out the dough and cut into circles for mini pie tins.

Filling

  • In another bowl, combine apples, sugar, cinnamon, nutmeg, and lemon juice.
  • Fill the dough-lined mini pie tins with the apple mixture and dot with butter.
  • Top with another circle of dough or create a lattice.

Baking

  • Bake for 20-25 minutes until golden brown.
  • Let cool slightly before serving.

Notes

Serve warm, possibly with vanilla ice cream or whipped cream. For storage, keep in an airtight container in the refrigerator for up to three days, or freeze for up to three months. Can use store-bought pie crust to save time.
