  • 2 pieces boneless, skinless chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 2 cups broccoli florets Chop into small florets for even cooking.
  • 1 cup sharp cheddar cheese, shredded For topping
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Fresh garlic preferred.
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and garlic, and sauté until translucent.
  • Season chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides.
  • Stir in the rice, chicken broth, and broccoli. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  • Once done, sprinkle shredded cheddar cheese on top, cover again, and let it melt.
  • Serve warm.

Notes

Serve directly from the skillet for a casual meal. Pairs well with a side salad or crusty bread. For leftovers, let it cool and store in an airtight container in the refrigerator for 3-4 days or frozen for longer storage.
