Main Ingredients

  • 4 pieces boneless chicken breasts Ensure chicken is evenly sized for even cooking.
  • 1 cup mushrooms, sliced You can use button or cremini mushrooms.
  • 1 cup Marsala wine Use a good quality wine for best flavor.
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • to taste salt and pepper
  • to taste fresh parsley, chopped For garnishing.

Preparation

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a large pan over medium-high heat.

Cooking

  • Add the chicken and cook until browned on both sides, about 6-7 minutes per side. Remove from the pan and set aside.
  • In the same pan, add the butter and mushrooms, sauté until browned.
  • Pour in the Marsala wine and chicken broth, scraping any browned bits from the bottom of the pan.
  • Return the chicken to the pan, cover, and simmer for 15-20 minutes, until the chicken is cooked through.

Serving

  • Serve with your choice of sides, and garnish with chopped parsley.

Notes

For a twist on the classic recipe, try adding Italian herbs like oregano or thyme. You can substitute chicken with pork chops or turkey breasts. A splash of cream can make the sauce richer.
