  • 4 pieces boneless, skinless chicken breasts Make sure the chicken breasts are evenly sized.
  • 1 cup breadcrumbs For extra crunch, add more breadcrumbs or mix in some crushed cornflakes.
  • 1/2 cup grated Parmesan cheese Reserve some for garnish if desired.
  • 1 cup marinara sauce Can be customized with added vegetables like spinach or mushrooms.
  • 1 cup shredded mozzarella cheese For a spicier version, mix in red pepper flakes.
  • 2 pieces eggs Beaten for coating the chicken.
  • to taste Salt and pepper
  • 1 teaspoon Italian seasoning
  • for drizzling tablespoon Olive oil To keep the chicken moist.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a shallow bowl, beat the eggs.
  • In another bowl, mix the breadcrumbs, Parmesan cheese, salt, pepper, and Italian seasoning.
  • Dip each chicken breast into the eggs, then coat it with the breadcrumb mixture.
  • Place the coated chicken breasts on a baking sheet lined with parchment paper and drizzle with olive oil.

Cooking

  • Bake for 20 minutes.
  • Remove the chicken from the oven and top each breast with marinara sauce and mozzarella cheese.
  • Return to the oven and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) to maintain crispiness. Let chicken rest a few minutes after baking to lock in juices.
