Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded rotisserie chicken, stuffing mix, cooked vegetables, chicken broth, garlic powder, onion powder, salt, and pepper.
  • Stir until well combined.
  • Transfer the mixture to a greased 9x13 inch casserole dish.
  • Spread the mixture evenly in the dish and top with shredded cheese.
  • Bake in the preheated oven for about 30-35 minutes or until the top is golden brown and the casserole is heated through.
  • Remove from the oven, let it cool slightly, and garnish with fresh herbs if desired.

Notes

Store leftovers by letting the casserole cool completely, then cover it tightly with plastic wrap or foil. It can be kept in the refrigerator for up to 3-4 days or frozen for up to 2-3 months.
