  • 1 lb Chicken thighs Use bone-in or boneless as per preference.
  • 1/2 cup Soy sauce Use gluten-free soy sauce for a gluten-free version.
  • 1/4 cup Brown sugar Adjust for desired sweetness.
  • 3 cloves Garlic Minced.
  • 1 inch Ginger Minced or grated.
  • 1/2 cup Water Adjust as needed for sauce consistency.
  • 2 tbsp Vegetable oil For cooking.
  • 2 cups Rice Cooked, for serving.
  • 2 cups Vegetables Like bell peppers or broccoli, for serving.

Instructions
 

Cooking

  • Heat vegetable oil in a pan over medium heat.
  • Add minced garlic and ginger, and sauté until fragrant.
  • Add the chicken thighs and brown them on both sides.
  • In a bowl, mix soy sauce, brown sugar, and water.
  • Pour the sauce over the chicken and bring to a simmer.
  • Cover and cook for about 20 minutes, or until chicken is cooked through.

Serving

  • Serve the chicken over cooked rice and alongside a scoop of fresh vegetables.

Notes

For extra flavor, marinate the chicken in the soy sauce mixture for a few hours before cooking. You can add more vegetables to the pan while the chicken cooks for a complete meal. If using chicken breasts, adjust cooking time as necessary. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
