Soup Ingredients

  • 2 tablespoons sesame oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 6 carrots, chopped
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds (for garnish)
  • to taste Salt and pepper
  • to taste Chopped green onions (for garnish)

Instructions
 

Preparation

  • In a large pot, heat the sesame oil over medium heat. Add the onions and cook until translucent.
  • Stir in the garlic and ginger, cooking for an additional minute until fragrant.
  • Add the chopped carrots and cook for about 5 minutes.

Cooking

  • Stir in the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils and carrots are tender.
  • Use an immersion blender to blend the soup until smooth. If you desire a thinner consistency, add more broth.
  • Stir in the soy sauce and season with salt and pepper to taste.

Serving

  • Serve hot, garnished with sesame seeds and chopped green onions.

Notes

For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce while cooking. If you want to add more greens, consider tossing in some spinach or kale in the last few minutes of cooking. Adjust the broth for your desired thickness.
