Preparation

  • In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat.
  • Add the chopped onion and minced garlic, cooking until softened.
  • Stir in the diced tomatoes, beef broth, frozen vegetables, and diced potatoes.
  • Season with Italian seasoning, salt, and pepper.

Cooking

  • Bring to a boil, then reduce heat and simmer for about 20-30 minutes or until the potatoes are tender.
  • Serve hot with bread to sop up the soup.

Notes

To store hamburger soup, let it cool completely. Transfer to an airtight container and refrigerate for up to 3-4 days, or freeze for up to 3 months. For a thicker soup, add more diced potatoes or a can of tomato sauce. You can also change the vegetables based on your preference.
